Salt & chili powder to taste
½ cup water (adjust for a thick batter)
Vegetables (sliced): 1 onion, 1 bell pepper, 1 large potato, ½ zucchini
Oil for frying

Instructions

1.Prepare the Batter: In a bowl, mix chickpea flour, turmeric, garam masala, baking soda, salt, and chili powder. Gradually add water to make a thick, smooth batter.
2.Add Vegetables: Stir in the sliced vegetables until evenly coated with the batter.
3.Fry the Pakoras: Heat oil in a deep pan. Drop small spoonfuls of the mixture into hot oil and fry until golden brown and crisp.
4.Serve: Drain on paper towels and serve hot with mint chutney or spiced yogurt dip.

For extra crispiness, add a spoon of rice flour to the batter.
